A cup of your finest please…

Amazake, another fine product made from the powerhouse Koji is non alcoholic and translates as ama(sweet)zake(sake) It is also made with sake kasu into a, usually, low alcoholic beverage and has a long history of over a thousand years. Although usually regarded as a winter drink it was popular during  the Edo period as a refreshing summertime pick-me-up sometimes served with grated ginger. The health properties are a draw for many but i personally enjoy its heady, intoxicating delicious nature for a beverage and countless other applications in the kitchen such as dressings, dessert, bread, cheese and anywhere a naturally sweet liquid is required. It also furnishes a cocktail with fine body in a Japanese or western fashion, amazake White Russians anyone!
